Exceptional food in an extraordinary setting - the Blue Heron offers award-winning cuisine at Santa Fe's only waterside restaurant. In warm weather, dine under age-old cottonwood trees overlooking spring-fed ponds. When temperatures dip, meals are enjoyed in the warmth of an art-filled, century-old adobe building.

 

Under the direction of Executive Chef Eric Laslow, the Blue Heron Restaurant offers regionally inspired cuisine using local, organic ingredients. Fresh fish, free range beef, and vegetarian selections are enhanced with ingredients freshly picked from our gardens.

 

Chef Laslow’s love of food springs from his Cuban heritage and immersion in rich cultural traditions. Of his culinary philosophy, he says, “For cuisine to have sincerity, it must connect one to his cultural, natural, and agricultural heritage.”

The Blue Heron’s extensive wine list offers the perfect vintage to complement any dish on the restaurant’s seasonal menus. Chef Laslow's selection of well crafted wines - often organically or biodynamically produced - encompasses exceptional internationals, including Alsatian, Spanish, Austrian, French, and Italian wines, as well as offerings from New Mexico, Oregon and California. Chef Laslow is particularly thrilled with the Pinot Noir Collection from the Willamette Valley in Oregon.

The Lotus Champagne Bar - New Mexico's only champagne & ceviche bar

Relaxed chic got out of the box, and is now lounging by spring-fed ponds. With a selection of over 30 champagnes, a special menu of inspired ceviches, and live music on Wednesday, Friday and Saturday nights and during Sunday Brunch, the Lotus Champagne Bar is a carefree way to enjoy the day, or start the evening.

 

We offer our full dining room menu and a full bar to complete the offerings.

The smell of roasting chile in the air signals the approach of Santa Fe wine lovers favorite event, the Wine & Chile Fiesta. This year, Executive Chef Eric Laslow will be pairing his seasonally inspired cuisine with the wines of two outstanding vineyards:

Tablas Creek Vineyard, Paso Robles, CA

Thursday, September 25 / 6:30pm, $135

Five wine-paired courses

Tablas Creek Vinyard follows the centuries-old Châteauneuf du Pape tradition of blending chosen varietals, producing wines more complex, better balanced, and richer than single varietal wines. All Tablas Creek wines are estate grown and organically farmed.

King Estate Winery, Eugene, OR

Friday, September 26 / 6:30pm, $125

Five wine-paired courses

King Estate's European-style winery produces award-winning Pinot Noir, Pinot Gris and limited amounts of Chardonnay, using sustainable farming methods, meticulous fruit selection, impeccable winemaking practices, judicious blending and a certified organic winemaking process.
